They become more resiliant to attacks and have a boost of speed and energy. A small amount of chakra is fed into their own from the Three Tails or whatever demon they posses, and they become animalistic in nature. A skilled Jinchuriki will be able to keep up this form for long periods of time, whereas a not so skilled one will faint after this jutsu's use from the strain on their body.
